450g dark chocolate
160 g egg yoks
400ml double cream
80ml milk
350g egg whites
200g sugar

additional
1kg sherry
200g sugar

melt chocolate, cream and milk
add egg yolks whilst whisking
mix egg whites and sugar until it forms peaks
fold into the chocolate and cool
