Kari’s Curry

1 chicken breast

1 onion

1 tsp Cajun seasoning

1 tsp cumin

1 tsp Garam Masala

3 cardamom pods

1 tin chopped tomatoes

250g Mozzarella cheese

3 eggs

Small pack Cherry tomatoes

METHOD

Cut the chicken into strips and Marinade the chicken in the cumin, garam masala, Cajun and cardamom for 4 hours, chop the onions into large dice and add to the mix

Once marinated chicken is ready, fry in a frying pan until the onions are soft, then add the tin of chopped tomatoes. Place into an oven proof dish

Cover the curry with sliced tomatoes cherry tomatoes and grated mozzarella cheese.

Place into a hot oven (180oc) and cook until the cheese has melted. (20-25 mins)

Crack the eggs onto the top of the cheese and bake again for 10-15 minutes until the eggs are fully cooked

Finish with chopped coriander
